Trip to Shan Dong (part 3)

The one of famous gourmet in Wei Fang is Chao Tian Guo (朝天锅). There was a history story behind it after I visited Shan Dong.

The story was originated from Qing Dynasty of folk morning market, the people from Wei Xian were unable to get the hot foods, there was the someone who was the small restaurant boss was putting out the big pot on the street, just in order to make the hot foods and vegetables for all the people around there, because of the pot without cover, so the meaning of the name it was. There were many strong goods which are pig head, liver, belly and meat ball in the steaming pot, as well the spring roll has to be attached when you are eating, Guests are served as they arrive, and there are many kinds of tastes of foods you can put inside the spring roll as you like, as well the hot soup is very fresh. So it was very popular.

At that period in Wei Xian Zheng Ban Qiao (郑板桥) was the head of county NO 1 of this area, He found the among of people were sitting around the pot to share the food together, he was so surprised it was not elegant eating outside, he suggested kindly that the owner can put everything into the door, and put it into the menu as well, from the beginning the people were not so accepted, the feeling was lost of eating outside instead of indoor food, but an initiative till today is very popular by the people, not only the history story behind, after I had the one on the street, it was very impressive compare with other foods.

In the northern areas, usually it is very cold. Therefore it is not easy to have food kept warm, especially in the ancient time. Thus the pot as you mentioned in Weifang really offered the chance for visitors and guests to enjoy the fresh food as possible as they can in time. That age without electricity and also had no invention of fridges, that was effective to prevent food from turning bad.

And the food is usually stronger than it is in my hometown. At some time having some of strong food is enjoyable. I visited to Taishan Mountain five years ago with colleagues by a journey organised by my company. We never ate such good steamed buns and breads. We also had many other strong food. they tasted quite good.
