Apricot Jam

It is the harvest season for all kinds of fruits in north of china, like cherries, peach and apricot. As I remembered at the last year this time, my neighbor gave me a bottle of Apricot jam, and I was told it was planted by herself in her courtyard and she made the bottle jam in such beautiful orange color, the taste was wonderful and MaMadya (in Malay).

This year I still missed the Jam and wanted to try by myself. After I got the detail steps how to do it from my neighbor at yesterday, I bought a lot yellow big apricots in the local market as I was told this kind of apricot it is only for jams.

Step 1. Cleaning and polishing the apricot in big pot and removing the bad part of it.

Step 2. Bathing in salt water for 15 minutes for all the apricots, make sure it is cleaning enough.

Step 3. Boiling in the normal pan with enough ice sugar, no any water at all during the boiling.

Step 4. Don’t make the fire too strong, stirring it all the time at the bottom of pan.

Step 5. More than one hour later, till the jam was kept bubbling up.

Step 6. After cool down, put it into empty dry bottle.

My people don’t understand why I was always collecting empty bottles all the time in my kitchen, just for the moment. This is my creative works to be gifts sent to my relatives and my friends.

Wow great. Apricot Jam. It is hard to find this kind of jam in China and you are so smart to make it yourself.

My grandmother used to make these jams and keep them in tidy glass jars in the kitchen and fridge. It tastes great and we used to spread them onto pieces of white bread for breakfast.

You are making it correctly the same way we used to make it the European way. The only slight difference is that lemon juice is added, but that is not really necessary. This would make a nice gift to friends and relatives. You are indeed creative and I wish I live nearby you and can enjoy it. Very nice.

Well done. It seems that jam is yummy. Probably I can try it, whatever it is good or not, I think it must be interesting.
